Hi Guys. Hope you are having a great Tuesday. Did anyone watch the eclipse yesterday? How about pictures, I saw some amazing pictures on social media. The whole experience was pretty awesome. The eclipse glasses were super cool.
I was actually at the beach for the day, and that’s where I got to see the magic happen. My husband and my mom and I took my daughter to the beach for the first time. Let me tell you, it felt like we were packing the entire house for one day. The best part was my husband having to push the heavy cart onto the beach with everything in it. I got the easy job of carrying my daughter 😆 Needless to say we had an amazing time, and it was incredible to see her reaction to the beach, the sand and the sound of the waves, unbelievable.
Speaking of unbelievable, I made Caramel Chewy Fudgy Brownies! Yes they are delicious. I made homemade caramel sauce that goes inside the brownies, and it is so easy, and tasty. The brownies are packed with awesome, including 1/3 cup of cocoa, and dark and semi-sweet chocolate chips. These brownies have the infamous crinkle on top, and so much chocolate goodness. The brownies actually absorb the caramel flavor while they are baking. Trust me, these brownies are delicious.
The caramel sauce is really simple to make, in fact it is 4 simple ingredients and less than 20 minutes time. For my recipe I do use almond milk, since heavy cream is a huge issue with my daughter’s stomach and breastfeeding. Feel free to use heavy cream instead of almond milk. I will say the almond milk makes the caramel sauce less thick. So if you love thick caramel sauce, feel free to add 2 Tablespoons of cornstarch to thicken the sauce right up. My best advice here is that when you are melting down the sugar, and it looks kinda like wet grainy sand, you are on the right track. Just make sure you pay attention to the sauce the whole time, as it can burn very quickly.
The brownies are a combination of chewy and fudgy. They have cocoa powder and melted chocolate, along with brown sugar, and regular sugar. They also have an extra egg yolk for that extra fudgy texture. The butter and chocolate are melted not whipped together, this makes the brownies super fudgy. Make sure to beat the eggs into the melted butter, chocolate and sugar for the full 4 minutes. I know this seems like a long time, especially if you chose to do this by hand but trust me, one look at that crinkle on top of the brownies and you will be glad you held out.
I do recommend baking half the brownie batter first for a few minutes. This allows the caramel sauce to spread easier, and the bottom to bake quicker, after the sauce is added. These brownies will actually absorb most of the caramel sauce while baking, which gives them their delicious flavor. These brownies are really packing a lot of flavor into such a little bar. Trust me you will not be disappointed.
