Hi my name is Amanda, and welcome to my blog!!!! I named this site “My Honey Muffin” primarily because muffins are by far my favorite breakfast food, and I love switching out sugar for honey as a healthier alternative. These are all my own tasty recipes, with a focus on natural non-processed ingredients. I can’t wait to share with you.
A little bit about me: I live with my husband Chris, in Wilmington Delaware. We have been married for a little over a year. We have a crazy/sweet pit-bull rescue named Meaty, of whom I will show you pictures with his adorable under bite. I work in the financial industry, but I prefer to be baking, cooking, and writing recipes for everyone. I am obsessed with red wine, and creative cocktails (I will post some tasty beverage ideas). I also love yoga, hiking, music and animals and spending time with my friends and family. Two things I have to admit: 1.) Spelling and grammar are not my strong suits. 2.) When I am baking…. I eat way too much batter.
How I came to baking and cooking: My favorite memory while growing up has to be spending countless hours in the kitchen baking Christmas cookies with my mom ‘Doris’, and my sister ‘Jen’. We spent days creating and filling every counter space we could with cookies. The house smelled amazing the entire month of December. You’re welcome dad! I also grew up around my nanny who baked a lot of recipes from scratch, and my Oma who made many German desserts and delicacies. I felt inspired by all these women in my life to make my own mark in baking.
My twist on Baking and cooking: I try to eat, bake, and cook as healthy as I can. One of my pet peeves is eating muffins/baked goods that have 30 plus ingredients, most of which I can’t even pronounce, when I can bake muffins, with 8 simple ingredients. I try to stay away from foods that are processed, or have been chemically enhanced or modified. I do not eat meat, but I will make it for others. My goal is to show you that with just a few extra minutes and basic ingredients you can make a homemade cake instead of a box cake. What’s more, it will be much tastier and healthier for you. With this site I will share a variety of tasty recipes, many with alternative options, such as less sugar, gluten free, or less dairy options. However, if you feel inclined to use all sugar and no honey, go for it!!!! Have fun baking and cooking, and do not be afraid to make a mistake. We all do it.
