Happy 4th of July!!!
I feel like this summer has just been flying by. We are already into July. As long as I do not see snow anytime soon we will be ok.
What are you doing today to celebrate Americans Independence Day? Anyone seeing fireworks, or going to a cookout, or perhaps are you baking like I am?
It’s always nicer when the holiday falls on a Monday or a Friday but, I won’t complain about a day off.
So I went to my parent’s house yesterday for a cookout with my family and my husbands to celebrate. I was in charge of bringing the dessert. I decided to do a desert with a patriotic theme. I went with an American flag brown butter sugar cookie cake, and besides being delicious this desert is also adorable.
This is a browned butter and brown sugar cookie cake, with cream cheese icing, topped with berries to create a flag. This recipe makes a lot of dessert, which is a plus if you have a lot of people to feed, or if you are like me and want to have three helpings.
Let’s start with the cookie cake. This sugar cookie has so much flavor from the browned butter. The cookie cake also has a really soft moist inside from using the browned butter which is added into the sugar in the liquid form. We are also using all brown sugar which from the molasses creates a more chewy and soft cookie. I also added an extra egg yolk to make them super tender texture and extra flavor.
The cream cheese icing is very simple, and requires no butter. This makes the icing have more of a cream cheese taste. For this icing i use vanilla bean paste. I feel this givens the icing great flavor, and none of the alcohol taste from the almond extract. Plus the little brown dots in the icing are pretty. If you do not have vanilla bean paste or vanilla paste, vanilla extract is just fine.
Lastly for the topping I used blueberries for the blue part of the flag, and strawberries for the stripes, and filled in the white stripes with coconut. If you would rather use other fruit that is blue and red that is totally fine. The strawberries I just sliced long ways.
