Well Hello!! Looks like hump day is over, and we are rounding the corner to the weekend. That means it has been 5 days since I have posted anything, which is way too long. Last weekend and the beginning of the week were crazy busy with my daughters baptism, and my sister and family being here. But don’t worry I managed to sneak in some baking almost every day.
I have a really good recipe I want to share with you today. By today I mean 10:27 at night, haha. By the way these cookies taste just as good at night 😆 . The cookies are Chocolate Espresso, which leads me to think maybe I am still wide awake from the espresso. But yes you heard me right chocolate + espresso. That’s almost as good as chocolate and red wine (side note I will be posting those cookies next month, and they are amazing). Back to the espresso for now.
These chocolate espresso cookies are delicious they have such a rich flavor from the combination of cocoa powder and espresso powder. The inside is so soft and chewy, and the outside has a delicious crisp exterior. These cookies have a slight brownie like taste to them. The best part is that each batch takes less than 10 minutes to bake. Have I sold you yet?
Espresso powder is very easy to use. Have you ever used in baking before? I know that I love espresso in my latte. Espresso powder is just coffee crystals that dissolve in liquid. The espresso powder is actually ground twice during the process. It is initially ground, than brewed and dries and ground again, to make the prefect flavor and texture. The powder usually comes in some type of small jar or container, and can be spooned out.
The chocolate flavor in these cookies is cocoa powder. Make sure you do not use Dutch processed. Cocoa does tend to make cookies and other batters drier so I added more butter to compensate. Make sure not to over bake these cookies as they are best with the inside being slightly fudgier and soft. I also used a cookie scooper to put them on the cookie sheets. I added chocolate sprinkles to mine, but feel free to add which ever you like, or opt out of sprinkles if you dare.
