This past weekend and even the last few days have been extremely hot. In fact, I think we are setting heat records for so many consecutive days over 90 degrees. I love summer just as much as the next person, but the thought of baking something in the oven during a heat wave doesn’t sound so fun. I can barely keep my house cool without turning an oven on to 350. I was thinking what I could make that requires freezing, not baking. I settled on ‘Dark Chocolate Double Peanut Butter Graham Cracker Bars’. Long title right? The silver lining…. I make these gluten Free. (You don’t have too)
So let’s talk peanuts for a second. Besides peanuts being the star ingredient in my favorite childhood lunch, PB&J sandwiches, these little guys are packed with nutrients. They have 65 grams of protein per cup (4 grams per tablespoon). They are also high in magnesium, iron, B6, calcium, and many other vitamins and minerals. Another great health benefit of peanuts is they provide resveratrol, which is an amazing antioxidant that is also found in my favorite drink, red wine 😀 Peanuts also lower risk of cardio vascular disease. They originated in South America, even though they are found across the globe today, and also go by the names ground nut, earth nut, and goobers. Here is the kicker… although ‘nut’ is in their name, they are technically in the ‘legume’ family.
This recipe has three simple parts that I’m going to break down. The crust is comprised of 2 ingredients, GF graham crackers and butter. These two are smashed together, then placed in a pan. Next is the middle layer of these bars which is packed with a combination of double peanuts; in the form of peanut butter and crushed peanuts. The peanuts can be easily chopped in a Veggie Chopper, or can be purchased chopped or crushed. The peanut butter and chopped peanuts are whipped with powder sugar, vanilla and almond milk. The last layer is the easiest, consisting of melted dark chocolate chips and almond milk.
The hardest part is waiting for these tasty little treats to harden before you consume them. 😛
