Today I want to talk about two of my favorite flavors. Did you guess chocolate and peanut butter? They are like the perfect pair right. Chocolate has such a rich decadent taste and peanut butter is so creamy and tasty. I was thinking, why not have a recipe that marries the two. These double peanut butter stuffed brownies are so darn good. Basically they are a brownie that sandwiches the double peanut butter. Are you hooked yet, if not trust me you will be.
Brownies are one of those desserts that have minimal ingredients and so basic, yet I feel they can be really hard to pull off perfection. By perfection I mean brownies that are slightly gooey and chewy inside, and have that beautiful shiny crinkle on top. I also LOVE my brownies to be pretty thick which leaves more room for all the gooey taste in between. Lastly I love the rich flavor of more than one chocolate and sometimes cocoa. Sounds delicious right?
Here is my top trick for the crinkle top, sugar and eggs. I believe that when the eggs are beaten for a few solid minutes into the butter and sugar (and chocolate if it has been melted into the butter already). This will cause a very thin layer of meringue to rise creating the crinkle. Also this means there has to be enough sugar to cause this to happen. Granulated sugar will work the best, if you use brown sugar or honey, it will not work as they are both way too heavy to allow the layer of meringue to rise.
Now, on to the good stuff, these brownies have two different types of peanut butter. They have actual peanut butter, and miniature peanut butter cups combined in the peanut butter. I used the Trader Joes miniature cups, and just sliced them into 3’s, than added them to the peanut butter mix. Please don’t feel guilty about the extra calories from the peanut butter, after all peanut butter has over 7 grams of protein per serving. Think of it this way you will get your daily serving of protein from eating a few brownies.
When you make these brownies, its best to put the first layer of brownies on the pan evenly. Than when you add the second layer which is the peanut butter layer, it will be a little harder to spread over the brownies. I used a knife to spread the mixture over the brownies. The last and top layer is the remainder of the brownie mix. I used a knife to spread this also as it’s a little hard to spread also since it’s over the peanut butter mix. But trust me this doesn’t have to be perfect, it will still be delicious I promise.
