Hi. Hope you are all having a great weekend. It’s actually pretty cool here, feels like a nice fall day surprisingly. Since there is no humidity I’ll take the cooler weather any day. Is anyone baking this weekend? I’m making a few yummy things, the best so far being my lemon bars with a delicious macadamia nut crust.
These lemon bars are delicious I promise you. They are also very light and refreshing from the fresher squeezed lemons used to make them. They are perfect for the summer, especially if you have any outdoor activities like a cook out or party. He hardest part of making the, will be eating any of them when they came out of the oven before they are chilled. Guilty here!
Lemon bars have always been my sister’s thing to make. When we grew up I was always more of a brownie maker and she was definitely the lemon bar maker. I’m guessing that is because lemon bars do not have chocolate in them. My sister always made great lemon bars however they were never from scratch always a box. This past week I thought wouldn’t it be fun to make them from scratch and then she can try them when she comes home to visit. (She lives in Miami on the beach). She will be home in two weeks to visit so we are excited.
Now back to these bars. For the crust I used a food processor to ground the macadamia nuts. If you do not have any or do not like macadamia nuts than just omit them. But I promise you they make this crust absolutely over the top delicious. The buttery nut taste is out of this world. The crust bakes for 18 minutes, so you can make the actual lemon bars while it is baking.
The lemon bars themselves have two main ingredients, lemon juice and eggs. I honestly didn’t know how much of a role the eggs played in this recipe until I researched this. When I was testing this recipe I noticed two different outcomes based on what I did with the eggs. If you beat the eggs for a solid 4 minutes before adding the other ingredients than your lemon bars will have more of a custard finish. If you just slightly beat the eggs than the bars will have more of a jelly like texture. Lemon bars typically are more on the jelly texture side, however I found both to be good, so that’s your final decision to make.
